This dish is a gourmet form of the vegetable mash known as veghash. It is served in the traditional edible bubble-shaped bowls.
You will need:
2 large potatoes
1/2 c frozen broccoli
1/2 c shredded cheese
1/4 cup milk
2 tbs butter
I don’t have a microwave, I put the potatoes in to oven on 350 degrees for an hour.
With a microwave: Microwave potatoes for 5-7 minutes until soft but still firm.
Please be careful, the tuber will be hot.
Slice the potatoes open and spoon out the soft insides.
I push the sides in to open the slice more without cutting it wide open.
Don’t poke through the skin. Leave some around the inside edges for stability.
add the 1/4 cup milk, 2 tbs butter.
Mash the potatoes with a fork until smooth.
Add broccoli pieces and cheddar cheese. Mix.
I chopped up my broccoli into tiny pieces.
Spoon the mashed potato mixture back into the potato bowls.
You will have extra from adding the milk, butter, broccoli and cheese.
Not to worry, just pile it on top.
Sprinkle cheese on top and bake in oven for 15 minutes.
Until cheese has melted and browned.
