This recipe is quite flexible.
It was originally an apple coffee cake but I twisted it around to work with pumpkin pie.

1/2 c shortening
1 c white sugar
1 1/2 tsp vanilla extract
1 c flour
1/2 c quick oats
(If you don’t have oats, replace the 1/2c oats with flour.)
1 tbs baking powder
(I use 1 tsp baking soda & 1/2 tsp lemon juice. I think it raises better.)
1/2 tsp salt
1/2 c milk
1 c pumpkin puree
1/4 tsp cloves
1/2 tsp nutmeg
1/4 tsp ginger
1 tsp cinnamon
1/4 cup white sugar
1 tsp ground cinnamon
In a large bowl, cream shortening and 1 cup sugar until light.
Beat in egg and vanilla until fluffy.
Add pumpkin, oats and spices.
Add flour, baking powder and salt to the creamed mixture.
Add milk slowly.
Spread the batter into a greased baking pan. Sprinkle 1/4 cup sugar and cinnamon on top. Bake at 350 degrees F (175 degrees C) for about 30-45 minutes, or until a knife comes out clean and the edges are brown.
