Hearty Onion Soup Recipe

Posted on Updated on

This was the most amazing french onion soup I have ever had. I will never buy canned soup again. This soup takes about 45 minutes to make. It is so delicious and filling, you won’t want anything else with this comforting soup.

You will need:

1/4 cup unsalted butter
1 tablespoon olive oil
2 cups sliced onions (1 large onion)
2 (10.5 ounce) cans beef broth ( I used a cup of water per beef cube)
salt and pepper to taste
2 slices toasted bread, toasted
2 slices Swiss cheese
2 tablespoons grated Parmesan cheese

Melt butter with olive oil in an 8 pot on medium heat and add onions.

Stir occasionally until onions are tender and browned.

Add beef broth. Season with salt and pepper, and simmer for 30 minutes.

After the 30 minutes.

Heat the oven broiler.

Toast 2 slices of bread per bowl of soup.

Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer). Please don’t skip the toasting of the bread step, it will get very soggy if you don’t.

Layer each slice of bread with a slice of  Swiss and 1 tablespoon Parmesan cheese. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.

It was a lot easier then I thought it would be. Not salty like canned soup is.
