These turned out way WAY better then I thought they would. Honey Cakes are my new Lord of the Rings party food.
You will need:
1cup (200 g) white sugar
1 cup (240 ml) honey
1/3 stick (60g) of butter or oil
3 cups (360g) all-purpose flour
1/2 tsp (15 ml) salt
2 tsp (60 ml) baking powder
1 tsp (30 ml) baking soda
1/2 tsp (15 ml) ground cloves
1/2 tsp (15 ml) ground allspice
(I don’t have allspice, I use ginger, nutmeg and cinnamon instead)
1 cup (240 ml) milk
In a large bowl, beat the eggs with the sugar until creamy. Add the butter and then the honey, beating after each addition. Sift and then measure 3 cups of flour. Combine with salt, baking powder, baking soda, and spices. Add these dry ingredients alternately with the milk to the honey mixture, stirring only until blended.
Pour into 2 greased 8 inch square pans.
Bake at 325 degrees F (162 degrees C) for 35 to 40 minutes, or until a toothpick inserted into the middle of cake comes out clean.
I apologize for my lack of photos here. I honestly did not think this recipe was going to come out. I had to make some subsitiutes. (I changed the recipe to reflect my changes) so I did not take any progression photos. Using butter instead of oil was one of my changes. It left the batter instead of smooth and creamy, with tiny butter flakes throughout the batter. They did eventually beat out as I incorporated the dry ingredients. So not to worry if this happens to you. I will update this page when I make it again. Oh yes, I will be making this one again.
It smells wonderful while baking.
I took it out of the oven and set it to cool. Walked back into the kitchen to this. It was a big hit.
Adding raisins, nuts or dates would be a nice touch too. Give it a try.
This recipe make quite a bit of batter. Along with the square dish I also made a loaf of honey cake. See first photo.
